Training for Trainers: Second Training Module

On April 9th and 10th, 2025, Civiform hosted the Second Training Module of "TESTEAT Training for Trainers" course, an opportunity aimed at trainers and teachers from schools, vocational training centers, and gastronomic culture centers in the restaurant sector. The goal is to provide tools to adapt restaurant offerings to consumer needs and choices.

The focus of Module 2 was the adaptation of the Restaurant's offer to the needs and choices of Consumers.

The program included two online didactic workshops (via Zoom):

  • April 9th, 2025, 2:00 PM - 4:30 PM: "When the 'special' customer becomes the norm"
    Speaker: Dr. Ariella Gliozzo, contact person for the group of psychologists of the Italian Celiac Association - Friuli Venezia Giulia (AIC FVG)
  • April 10th, 2025, 2:00 PM - 4:30 PM: "Cuisine without 'labels': when it's good, it's good for everyone!"
    Speaker: Margherita Missana, executive chef of the Italian Celiac Association - Friuli Venezia Giulia (AIC FVG)". 

"Until a few years ago, providing a “special” service meant preparing specific dishes, but now it means preparing dishes for everyone, where possible, simplifying management and expanding the customer base" -  said Jessica Vidusso, Regional Coordinator for AIC FVG.

"Adapting to this change requires important skills, which are not only technical, as will emerge during these meetings. As the sector evolves and needs change, we do not want these lessons to be exhaustive, but we hope that they will remain a reference point for continuous and dynamic reflection that will allow you, and indirectly your students, to adapt and evolve along with the market".
